Cajun Cornbread
This Cajun Cornbread is the perfect side dish when you want something savory and spicy. Just the right amount of heat and sweet makes this an excellent comfort food that is easy and quick to make. We recommend smoking the corn and the cornbread for that elevated taste with extra complexicity but if you don't have a smoker you can always use the oven as well. Try this cornbread with your next cajun meal or even just as a side with your favorite BBQ!
Ingredients
Cajun Cornbread
- 2 Ears Corn on the Cob
- 1 tbsp Parkay Squeeze Butter

- 1 Jalapenos (We like it a bit spicier and use 2)
- 8.5 oz Cornbread Mix (1 box)
- 1 large Egg
- ⅓ cup Milk
Cajun Honey Butter
- 4 tbsp Salted Butter

- 2 tbsp Honey
Instructions
Cook the Corn
- Preheat grill or smoker to 400 °F
- Coat ears of corn with Parkay Squeeze Butter then season with Grill Your Ass Off Claymore Cajun Seasoning.2 Ears Corn on the Cob, 1 tbsp Parkay Squeeze Butter, 1 tbsp Grill Your Ass Off Claymore Cajun Seasoning
- Grill corn for 25 minutes, turning occasionally.
- When the corn is done cooking, remove the corn from the cob.
Prepare the cornbread batter
- In a large bowl mix together cornbread mix, milk, egg, corn and diced jalapenos.8.5 oz Cornbread Mix, 1 large Egg, ⅓ cup Milk, 1 Jalapenos
- Add mixture to a greased medium bread pan (8x3 small loaf pan)
Smoke the cornbread
- With the smoker still at 400 °F cook cornbread for 20 minutes.
Make the honey butter
- Microwave the butter till it is soft.4 tbsp Salted Butter
- In a small bowl mix together butter, honey and 1 Tbsp of Grill Your Ass Off Cajun Seasoning.1 tbsp Grill Your Ass Off Claymore Cajun Seasoning, 2 tbsp Honey, 4 tbsp Salted Butter
